Ventoux white: a versatile white wine with the acidity to make it a refreshing aperitif with a bowl of olives or some salami. It is also wonderful with grilled fish or cheese and very happy with chicken in creamy sauces.

Assemblage

60% Bourboulenc, 40% Roussanne.

Vinification

Handpicked early in the morning, when it is cool, to ensure they are delivered to the winery in the very best condition, the grapes were crushed, destemmed and gently pressed before the juice was settled for 48 hours. After racking, the juices were fermented separately at temperatures of 12°C in stainless steel tanks. The fermentation can last up to two months, lending both fruitiness and elegance to the wine. After careful blending, the wine will be bottled after having aged during 4 months to conserve its freshness.

Tasting Notes

Colour: Bright, straw yellow with green lights.

Nose: Charming and intense, with nuances of blossoms and white cling fruits

Palate: Full, rich but well-structured. Dominated by fresh fruits, white peaches and exotic fruit, finishes with a citrus note. It is very long and finishes with a suggestion of minerality.

Cellaring: Best drunk young, but will develop an interesting honeyed note with time. A food wine that will also revitalise the palate as an aperitif.
