Chérubin

Chérubin: pure Viognier, this is the perfect accompaniment to salmon, hot or cold, or even some ambitious fish dishes such as the famous pike dumplings eaten in the Rhone Valley. It also pairs wonderfully with goats' milk cheeses.

100% Viognier.

Vinification

The grapes are picked early in the morning to when it is cool to ensure that they delivered to the winery in the very best condition. After crushing, destemming, and gentle pressing, the juice is settled for 48 hours. After racking, the juices are fermented separately at temperatures of 12°C in stainless steel tanks (75%) and barrels (25%). The fermentation can last up to two months lending both fruitness and elegance to the wine. After blending, the wines are bottled in early spring conserving their freshness.

Tasting Notes

Colour: Bright yellow with intense green lights.

Nose: Complex, expressive and true to type with some hints of box hedge, exotic fruits and tinned apricots finishing with the aroma of orange blossom.

Palate: Rich and fleshy, nicely balanced on the palate between richness and freshness. Once again there is a taste of exotic fruit, apricots and citrus fruits, giving an all-over impression of multi-faceted flavour and freshness.

Cellaring: Excellent drunk young, but will become increasingly honeyed with time.
